Spaghetti Dominico Redux

Based on a dish that I developed several months ago (see 2.176 Spaghetti Dominico with Cherry Tomatoes), this version is simpler and perhaps better as a result. For one thing, I didn’t include parmesan cheese this time, giving the sauce a much cleaner profile focused on the shrimp flavor. I also eliminated the cherry tomatoes, which had previously provided a welcome touch of sweet acid to the then-richer sauce, but the lighter sauce here didn’t need any counterbalance. Instead, I added a tablespoon of fresh parsley and doubled the amount of fresh basil to about 4 tablespoons – basil + shrimp, my current favorite herb-seafood combination – which intensified the shrimp flavor even more. With fresh pasta someday, Dominico Deluxe will surely rate 4.0.
