I asked W, who’d made the dish and therefore had complete discretion to decide what to call it, what she was calling it. Before she could answer, I reminded her of the controversy surrounding the traditional name “dak dori tang,” an issue discussed in a prior post (see 2.110 Dak Dori Tang). Without hesitation, she said, “dak dori tang.”
