Turkey Sandwich on White with Homemade Mayonnaise

My first mayonnaise. It was much easier than I would’ve thought. From Jamie Oliver’s recipe in his book Cook With Jamie, it just required an egg yolk, dijon mustard, extra virgin olive oil, lemon juice, salt and pepper. The yellow concoction that resulted bore no resemblance to the creamy white stuff in the bottle, neither in taste nor appearance. On its own, I found it a bit too tart, and the olive oil flavor too strong. As a condiment, however, it worked quite well within the context of the sandwich. Not a bad try but with room for improvement next time.
