Oxtail Stew

I improvised a decent stew, without a recipe and without ever having attempted such a dish, spur of the moment, using an array of random ingredients culled from the fridge. Those yellowish squares, for example, were cut from an (unused) odd lasagna noodle leftover from yesterday. Significantly, this was also my first use of roux – in this case, EVOO and all-purpose flour – which worked like a charm, though I can’t remember where I learned to do it. Or the stew for that matter. Reading all those cookbooks just for fun may be proving to be productive after all. One of my proudest moments as home cook.
