More leftovers (see previously 3.207 Lemon Pork Cutlets with Sambal Oelek Sauce).

This dish – inspired loosely by a reference to huevos rancheros in the newspaper earlier in the day – seemed like such a good idea when I was making it in my head on the drive home.  Sadly, it didn’t work out quite so well in reality.  The salsa made the quesadilla soggy, for one thing.
