For no particular reason, I’ve never liked having more than a single source of carbs in any given dish. For example, spaghetti ragu with garlic bread. Or, to cite a triple whammy, potato curry with rice and naan. More of a pet peeve than a principle, I wouldn’t go so far as to refuse any such combination if someone were to offer it to me, but I wouldn’t put together anything that way myself. I also don’t like multiple types of meat in a dish, such as pizza with pepperoni and sausage.
Inspired by idiosyncrasy, I came up with this idea of serving a thick meaty tomato sauce, plus some freshly grated parmesan, with hand-torn chunks of plain baguette -no pasta. It makes for an awesome appetizer/anju, one that can be prepared well in advance and sit around for hours at no risk of decline in quality.
