Toasted Wheat Bread Sandwich with Turkey & Gruyere in Italian Dressing

In high school, my best friend HL had a pass that granted him and a guest (me) access to the US Army post in Yongsan. On the occasional weekend visit, we’d sometimes eat at Robin Hood Sandwich Shoppe and Deli, a sandwich/deli chain found on US military installations throughout the world. The only thing that I can recall about the food is that they’d top the sandwiches upon request with various salad dressings. I carried the practice with me to college, where a large part of my diet in the dining halls consisted of self-service sandwiches, the dressings from the adjacent salad bar providing welcome variety, as well as character, to the typical turkey/ham/roast beef cold cuts available. Italian and ranch were my favorites, though not together, of course. Still are. So simple, yet transformative.
