After searing the scallops and shrimps, I deglazed the pan with chardonnay, plus butter and garlic, then asparagus tossed in at the final minute. The asparagus turned out unpleasantly acerbic, almost to the point of being rancid, which reminded me about that certain chemical compounds in asparagus, the same that make pee smell funny after eating it, can react badly with the wine to produce a peculiar off-flavor. The scallops and shrimp, as well as the potatoes, were okay, but kinda dry.
