Beef: ground, sautéed with ad-libbed Mexican-style spices (e.g., cumin, chili powder).

Black beans: from a can, simmered in Corona beer with sugar and bay leaves – the only weak link.

Cheese: Pepper/Colby/Monterey Jacks, still leftover from the raclette.

Chili sofrito: spur-of-the-moment ad-lib, including minced onion/shallot/garlic/celery/cilantro and pickled jalapeńo chilies from a jar – this was the kicker.

Couscous: also 2nd-round leftovers, in lieu of rice.

Cilantro: fresh.
