CafeFrance is a local western-style restaurant/bakery/café chain.  Established in 2010.  Currently 25 locations, all and only in the Philippines.  Rather than specifically French, the menu is more generally European, with pastas, sandwiches, pizzas, salads, etc.

The food was hit … then miss.  At first bite, the fish was excellent.  Never have I experienced such a crispy piece of deep-fried fish.  The thin strip form, giving each piece a higher ratio of crust to fish, further enhanced the crispiness.  And the dory provided a rich creamy flavor, perhaps even better than the traditional cod, which is far less fatty.  The aioli was also quite nice.  About halfway through, however, I realized that the fish was undercooked, practically raw, which I hadn’t initially noticed because of the crust.  I should’ve asked the kitchen to cook them some more, though that probably would’ve burned the crusts, but I didn’t feel like bothering and left the rest untouched.
