Eating my way through the restaurant’s entire menu, currently at 222 items.

Tasted 7 new items tonight, bringing the total to 50 items tasted thus far, 172 items remaining, averaging 4.5 items per visit, on pace to finish at TEITY 49.

The Special Beef Brisket in Pot featured a welcome surprise.  In addition to the braised beef, luxuriously tender, the pot included knee ligament, nicely al dente.   Not my favorite thing, but, crucially more important, it is one of the RD’s favorites, so the dish will very likely make the menu selection when I eventually propose to hold the next dinner for the Korean WPRO staff here.  A bit one-dimensional, however, it may need some customizing, perhaps with deep-fried tofu and a vegetable.  In any case, the discovery of things like this is what keeps me at TEITY.
