Shrimp Spring Rolls

From the welcome reception buffet for participants of a workshop on injury prevention.
Though vaguely similar at first glance to something that I’d once made a few years back (see generally 2.187 Damn Yo Shrimp*), the spring rolls turned out to be a sham as the shrimp had been minced and mixed with mashed potatoes and other fillers, the tails just peeking out for show.
* Which reminds me, I never followed-up on this very promising dish….
