Shrimp & Broccoli in White Pepper Sauce

2.5

My first attempt to recreate the family’s favorite sauce — Singaporean white pepper — from our favorite restaurant in Manila — Tao Yuan (see most recently 6.044 Slipper Lobster in White Pepper Sauce).

Room to cook in earnest — BTW, when I develop a dish, I typically start with a published recipe but tweak it on the fly to suit my palate as I’m cooking/tasting and make notes on a Post-It, which becomes the basis of my own recipe, which is retested and adjusted on subsequent occasions.

Reasonably close.  Turned out to be similar to my Corsino Sauce, though heavier on the white pepper.  And too dark in color — too much soy sauce.  And not enough … je ne sais quois.  Needs work.

  1. oh, finally WHITE PEPPER SAUCE! 2.5 rating for the first attempt–nice!

btw, are you available for any lunch/dinner time in the next week when i’m in town?

  2. yes, of course! we could go to TY for white pepper lobster… OR… Li Li for what may be the greatest scallop dish that I’ve ever had in my life. Let’s discuss via email…
