Whereas the meat comes chopped by default (see generally 6.210 Liempo), it can be left whole upon request.

Personally, I prefer it whole because I can trim away the layers of fat and skin, leaving just the leaner meat in between.

However, doing so does take away from the amazing textural experience of chewing on the meat and skin and fat together in every bite.
