Cucumber Dubu Kimchi

Dubu kimchi, yet another Korean dish that seems so simple yet continues to elude me (see most recently 6.093 Dubu Kimchi with Hotdogs).

The cucumbers, a totally unconventional component — try as I might, I can’t recall ever seeing cooked cucumber in any Korean dish — kinda worked.
