Scallop & Cauliflower Fajitas
in my apartment
Too lazy to sear the scallops whole, I diced them and sautéed with the rest — rubbery and tasteless.
Also, rather than plating the salsa as a topping, I’d used it as a marinade — wet mess.
Whole wheat tortillas — cardboard.
Improvised sour cream with ricotta cheese + lemon juice + red wine vinegar + salt & pepper + garlic — worked like a charm.
Shredded iceberg lettuce — such an underrated accompaniment.
