Squid has a delicate texture arc that is generally undesirable either undercooked or overcooked, thus demanding careful preparation within a narrow window of doneness. This isn’t at all difficult, like roasting a 10-kg turkey – it just means to resist cooking the squid bits for longer than, say, 30 seconds.
Here, the squid – baby squid, the most delicate of all – had been overly prepared to the point of borderline mushiness.
