Trying to replicate northern-style mandu (see for example 8.296 Mul Naeng Myeon), but turned out a bit dry on the inside – perhaps not enough pork fat.

Perhaps rather than increasing the fat to lean ratio, you could increase the amount of tofu and bean sprouts/cabbage/whatever veggie to add more moisture?
well, by “dry,” i meant that it seemed to lack … juiciness/succulence … which i was thinking had more to do with fat than water. my mother suggested vegetable oil. but maybe tofu, as per your suggestion. we’ll see…
