In the Philippines, tofu is typically cut into dice then deep-fried to the point of hard tastelessness, like croutons, devoid of any tofu essence.
On the other end of the spectrum, fermented black beans (tausi) are often incorporated into dishes as is, leaving the beans whole, little obnoxious salt bombs, rather than rendering their essence as a component of a sauce.
