Chicken Biryani

Biryani is an Indian rice dish. Rice, mixed with spices, layered with various vegetables and/or meat, steamed/braised. That’s all I know about it.
2 years, 8 months, 28 days later (see 7.109 Chicken Tikka…) I finally manage to make a third dish from ADL’s stash (see 7.103 Nokdu & Zucchini Fritters).
The biryani was a bust. Somehow simultaneously too salty, too spicy, too bland, too blah, while the rice seemed both undercooked and overcooked at the same time. Dominic: “Dad, we’re trying our best to eat this, but dude.” Even though I might be a fairly competent cook in general, I’m still utterly inexperienced at cooking South Asian cuisine specifically, which is quite a challenging tradition in its complexity of flavors and textures, so I don’t know whether I’m on the right track during the early stages, and don’t know how to adjust at the end.
