Yes! Scraps are the best part.
I remember once I was in an AYCE Brazilian bbq place, where they come with meat on skewers and cut slices off as requested. I specifically pointed to a very fatty gristley part, which was served to me accompanied by a very strange and judgemental look.
my wife says i;’m a hypocrite because i like the beef tendons but refuse to touch chicken ligaments.
