The rack of lamb was sold at 1176 grams for 1293 pesos. The weight of the trimmed fat (pre-cook) – the rack had come insufficiently frenched to remove the excess fat – and leftover bones (post-cook) came out to about 680 grams, leaving about 496 grams of edible protein.
I’m beginning to wonder if I even like lamb anymore.
Final edible protein mass is probably even less, considering moisture and fat loss during cooking 😛
Also, please tell me you used the fat for something (plov? Mmmm)
I’m beginning to dislike the gaminess of lamb, which is even worse in the fat.
I give all my trimmings to our nanny, who thinks I’m crazy not to eat the best part.
