Luganighe Sausage with Saurkraut

Luganighe is a Swiss sausage. Originating in the Canton of Ticino, which borders Italy, deriving from the Italian sausage luganega, it’s a straightforward pork sausage.

As with any meat purchase in the Philippines, even in a high-end establishment, a smell check is warranted to determine whether the sausages are actually fresh.
Here, I had initially considered the English Bangers, but a quick sniff clearly suggested they were past due, possibly even gone bad.
