Spaghetti con la Mollica

Project Cook Every Silver Spoon Spaghetti (CESSS).  To level up my skills in La Cucina Italiana, I will try the 11 recipes for spaghetti as featured in the seminal Italian cookbook The Silver Spoon (see The Silver Spoon).  Spaghetti con la Mollica (spaghetti with breadcrumbs) is the 5th in the series.

With 5 just key components – bread crumbs, garlic, anchovies, black olives, capers – plus pasta, olive oil, salt, pepper, this was the most ingredient intensive recipe thus far.

It was good.  The bread crumbs, first sautéed with minced garlic and salt, then sprinkled on top of the spaghetti, provided a nice crisp – a technique that I will adapt to other applications.  The anchovies, black olives, and capers combined for a distinctive trifecta of pickled saltiness, which I appreciated, though not so much the boys, who did their valiant best to try it.  IZ: “Dad, sorry, but I’m not really liking the anchovies.  Or the olives.  Or the capers.”  W liked it.  In the end, a net positive.
