Spaghetti all’Amatriciana

Project Cook Every Silver Spoon Spaghetti (CESSS). To level up my skills in La Cucina Italiana, I will try the 11 recipes for spaghetti as featured in the seminal Italian cookbook The Silver Spoon (see The Silver Spoon). Spaghetti all’Amatriciana (spaghetti amatriciana) is the 7th in the series.
Amatriciana is an Italian pasta sauce. Traditionally consists of guanciale (cured pork cheek + tomatoes, sometimes cheese, sometimes onion. Supposedly originating in the town of Amatrice, hence the name.
Another recipe with a remarkably minimal number of ingredients, no garlic – here, only 4: tomatoes + pancetta (I substituted with chorizo) + onions + chili, along with olive oil, salt, pepper, and later Romano cheese.
It turned out a bit bland and boring, despite the spicy sausage and spicy chili.
I’d made a side dish of asparagus, sautéed in butter with leftover chorizo and bread crumbs.
Combining the asparagus dish with the pasta dish was an excellent idea.
