Haewoori (해우리) is a Korean restaurant.  Specializes in seafood dishes, including their signature hae cho.

Hae cho (해초) is a Korean dish.  Sliced raw fish (hoe) wrapped in various types of seaweed (hae cho), dipped in sauces.

3 types of seaweed.
Gwangeo, sliced razor thin.

It was good.  The seaweeds provided an interesting combination of stringy/crispy textures, brought together by the chewy fish, the briny/bitter flavors accentuated by the tang of chogochujang.  The leanest and most nutritious meal that I’ve had in recent memory.
