Grilled Cheese Sandwich with Sun Dried Tomatoes & Anchovies

Whereas the grilled cheese & sun-dried tomato sandwich – one of my signature dishes – has always reminded me of pizza, and my favorite pizza topping is anchovy, I’d never thought to combine the two.

I prefer to use good semi-soft cheese, preferably Muenster or Gouda, but the store only had processed “cheddar” slices; I shredded some parmesan on top to boost flavor.

It worked, sorta.  But because the anchovies were inside the sandwich, they were insulated from direct heat and thus stayed “raw.”  Next time, I’ll cook them a bit initially until they begin to melt and sizzle, then add them to the sandwich.
