Baguette Sandwich with Tomato & Egg

In the decades of making this sandwich, one of my all-time favorites – most commonly on standard sliced sandwich bread, ideally on toasted bagel – I had never thought of trying it with baguette.

Like a bagel, the baguette works because its structure remains intact from the moisture of the tomato and egg yolk.
