Though loathe to admit finding inspiration at McDonald’s, I admit that I was inspired by the Arrabbiata Ricotta Chicken Burger (see 13.131 Arrabbiata Ricotta Chicken Burger). To my standard tomato & fried egg sandwich, I tried adding a thin layer of ricotta cheese, applied on one side of the bread (mayo + mustard on the other), kinda like a condiment.

Happy that local producers are now offering fresh cheeses, including ricotta.
Rather than a single egg, which is inadequate in size and bleeds when cut down the middle, I now use two eggs, in opposite corners, spaced apart.

It was okay.  Made the texture somewhat chalky, but the delicate flavor went well with the tomato.  I won’t do it again, at least not with this sandwich.
