During yesterday’s outing to Jayang-dong, we stopped by a small grocery store, where I purchased a few chili products, including Pixian douban jiang and mala-less Laoganma.

With my new condiments, I attempted another mapo doufu to emulate that transformative mapo doufu that I’d experienced in Osaka (see 13.354 Mapo Doufu).

Better than my prior attempt (see 13.358 Mapo Doufu 2.0), now distinctly oilier, nothing at all like a gravy, but still too chunky.  Without mala, the flavor was much more to my liking.
