The Gamja Project (15)
In this series, I cook potato dishes using freshly harvested gamja gifted to us from a neighboring farmer at the cabin (for more background and related posts, see THE GAMJA PROJECT).
While the prior installment had been intended to be the finale, I made a bonus dish with the leftover potatoes, primarily comprising the skins.
Mostly hit, slightly miss. Without the corn starch, the potatoes weren’t optimally crispy, but good enough. The skins amped up the potato flavor. Next time, I’ll use corn starch and deep-fry all the potatoes together.
