Chicken Minestrone Soup

Kinda like that stew a couple weeks back (see 14.359 Pork Stew), but with chicken, more finely diced veg, and a lighter broth.

Likewise, I was generally inspired by watching various Italian-American soups featured on Sip & Feast (see for example Minestrone – The Most Comforting Classic Italian Soup).

It was excellent.
