Having purchased the fish from E-Mart Traders, I took to it to the next level by serving the tuna with sushi rice and seasoned laver for a Choose-Your-Own-Adventure, DIY, family style meal – which, apparently, is all the rage these days (see most recently 15.239 So Myeon with Odeng and Clams, Family Style).
Very nice. The fish was good, c0ming in a range of cuts, from akami to toro, all pristinely fresh and tasty. The rice could’ve used more vinegar, but I hadn’t prepared sushi rice in years (see most recently 11.016 Krab & Cuke Maki). The laver was the roasted Korean kind, which added extra flavor from the salt and oil. Everyone loved it.
Recently, I’ve taken to smearing wasabi directly on the fish, rather than mixing it into the soy sauce. The wasabi flavor comes through more sharply. (And the soy sauce stays clean.)
