Nishin is a species of fish.  Clupea pallasii in Linnaean taxonomy, also known as Pacific herring in English, or cheongeo (청어) in Korean.  Popular in Japanese cuisine, particularly for grilling (not really for sushi), moreso for its roe (hakonoko).

The food was amazing.  With the owner temporarily out of commission from a leg injury, everything was prepared by an alternate chef who, sorry to say, seemed to possess superior chops, certainly in sushi.  The hakozushi – perfectly seasoned fish pressed into perfectly seasoned rice, wrapped in roasted laver – was comparable to the one in Tokyo, where I’d first tried the dish (see 5.146 Shime Saba Hakozushi).  Overall, the meal was the best that I’ve experienced at this restaurant.
