Pan-Seared Chuck Steak with Mushrooms & Abalone

Though dry-marinated for 4 days, the beef itself (USDA Prime chuck eye roll) was inherently flavorless, resulting in a well-seasoned yet bland steak.

New hack that I learned (from W, of all people): parboil the abalone shell-side down for a few seconds, which will get the meat to separate neatly and easily from the shell.  

Shoulda sautéed the mushrooms at a higher temperature to get better browning.

The abalone didn’t contribute much.
