Chicken with Paccheri in Tomato Sauce

I love it when the fridge just happens to contain exactly the right amount of ingredients for the right number of servings.  Tonight, I had a single chicken breast + a handful of leftover paccheri from the chicken noodle soup the other day (see 16.035 Chicken Paccheri Soup) + exactly one portion of frozen tomato sauce (can’t remember where from) – a perfect meal for one.

Diablo Dark Red: also can’t remember where/when/who I got this from, but it was surprisingly good, its deep spicy notes pairing nicely with the zing of the tomato sauce.
The name of the wine pairing thematically with American Horror Story…
