Dramatic reduction of sauce volume: 0.25 cup of marsala wine + 1 cup of chicken stock – down from 0.5 cup of marsala + 2.5 cups of stock (see previously 15.352 Chicken Marsala).  The smaller amount was just right for 4 breasts and 3 packages of mushrooms.  Double it if serving with mashed potatoes, pasta, and/or bread.

Maybe an extra splash of wine for a touch more marsala flavor.

Whiskies/whiskeys (2 cheap Scotch, 1 cheap American, 1 mid-range Australian) long since consumed, bottles photographed here for posterity.
