An I-Bone Steak is not really a thing, in the real world, as far as I’m aware. At Awesome, however, it’s a cut that comprises a long, straight bone with a flap of meat attached. When I asked the owner about it, he replied vaguely that it’s one of the “end pieces of rib.”
Whereas the I-Bone costs 50,000 won for a pre-cook bone-in weight of 450 grams (+/- 50g), it’s the 3rd priciest cut (among 6 options), but the best value at 11,111 won per 100g. By comparison, the Salchisal costs 45,000 won for 230 grams (+/- 20g), representing the 4th priciest but worst value at 19,565 won per 100g.
Out of curiosity, I took the bone home and weighed it. With the tendons, which had been impossible to remove at the restaurant with table utensils, and thus too tough to eat, the bone was 157 grams. Assuming an exact starting weight of 450 grams, the steak would’ve yielded 293 grams of edible meat, thus 17,065 won per 100g (of edible meat), still better value than the Salchisal but not far off.
