    • 1.5 cups (long grain) rice
    • 2 TB olive oil
    • 2 TB butter
    • 1/2 minced onion
    • 1 cup minced tomato
    • 1 minced garlic clove
    • 1 TB tomato paste
    • 1 TB chicken powder
    • 1/2 tsp cumin powder
    • 1/2 tsp chili powder
    • 1 tsp onion powder
    • 1 tsp garlic powder
    • 1 cup enchilada sauce
    • 1 cup water
