The third in a series of dishes applying canned enchilada sauce as a seasoning base (see previously 16.208 à la Enchilada (2): Pork Tacos; 16.207 à la Enchilada (1): Babyback Ribs): half of the can was used for Mexican/Spanish rice, while the rest went to marinate cubes of pork shoulder, which were roasted in the oven then mixed into the rice during the final fluff phase.
Very promising. Next time, half as much in the rice.
