The primary objective of tonight’s meal was to eat up as much oisobagi as possible. I’d made a large batch recently, but the cucumbers are already starting to go mushy – once mushy, they’re inedible.
I suspect that the problem is that I’d deviated from the standard practice by dunking the cucumber pieces into cold water after the initial hot-water salting, hoping that the cold water water would help retain crunch.
