Jeyuk (Half) – Sublime as Ever

On our prior visit, I was disappointed to find the jeyuk “disappointingly dry” and rated it 3.0 (see 17.203 Mul Naeng Myeon (Gobaegi) – Perfect as Ever), though the dish had previously been described as the “sublime … perfectly tender … ultra-silky … sweet and savory … distinctly porcine … the ultimate pig in its purest form” and rated 4.0 (see generally 11.332 Jeyuk).
This time, I was relieved to find it back in top form.
Previously, I suspect that it was just a part of the pig that was dry through no fault of the kitchen.
Working regularly with pork belly to make bossam (see most recently 17.172 Bossam), I’m well aware that the layers of meat and fat can be quite inconsistent, which is evident at most restaurants (see for example 16.199 Bossam); but here, the care in selecting cuts where the meat and fat are perfectly balanced and evenly distributed is remarkable.
In consultation with DJ, who returns to Berkeley next week, the final dining schedule has been set, starting with Jinmi.
