Beef & Spinach Lasagna

I can’t recall ever eating lasagna in a restaurant. In fact, I can’t recall ever eating a lasagna other than one made by my mom, or me, which is essentially from the same thing. So, without any point of comparison, I can’t really say whether my mom’s, or mine, even resembles real lasagna. We use a combination of ricotta+mozzarella+parmesan, ground beef and tomato sauce, so we’re probably not too far off the mark. In any event, the lasagnas usually taste pretty good, regardless of authenticity.
This time, in a radical departure from decades of convention, I added fresh spinach. Alas, it turned out somewhat watery, didn’t hold together too well.
