Mackerel Jorim with Pan-Fried Tofu
-Oksu (Joongang Heights Apts), Seongdong, Seoul, Korea-
While “jorim” (조림) means “braised,” the term is often used in the context of fish braised with radish chunks in soy sauce and gochujang (고추장). The fish is almost always one of the following three: mackerel (“godeung-eo”) (고등어), pike mackerel (“ggongchi”) (꽁치), or hairtail (“galchi”)(갈치). And usually, the dish is served with rice.
Here, I added pan-fried tofu, not typical but entirely acceptable.
