Somyeon is a Korean dish. The eponymous noodle – “so” (small/thin) + “myeon” (noodle) – is flour-based and comes dry in a package. The soup typically comprises anchovy stock, seasoned with soy sauce, plus any manner of toppings, such as sliced onions, carrots, spinach, zucchini, egg ribbons, dried seaweed, perhaps fish cakes. A common dish at home or at large gatherings, like weddings.
When I was growing up, my mother used to make it every Saturday/Sunday for brunch/lunch, still does if ever I’m at their place on Saturday/Sunday for brunch/lunch.
