Dubu kimchi (두부김치) is a Korean dish. Consists of tofu (dubu), either boiled or pan-fried, plus stir-fried kimchi, often with pork, typically pork belly. Extremely popular dish in pubs.
When I make it at home, I prefer it without meat.
A fairly easy dish – the strong flavors of the kimchi allow for a lot of leeway – but something was off tonight. Maybe it was the last-minute addition of celery, a totally foreign ingredient to Korean cuisine.
