Deep-Fried Pork Riblets

with KIT
Dropping by KIT’s restaurant, I found him frantically struggling to handle the sudden arrival of a 50-person party, some kind of student group celebrating something or other, with only himself and a single server on duty. Orders weren’t being taken, food wasn’t getting served, tables weren’t being cleared. So I donned an apron and got to work, making use of a skills first developed at my mom’s cafe during my high school years and later honed at my uncle’s sushi restaurant when I was in law school. Afterwards, we went upstairs for a quick bite at a Chinese lamb skewer joint.
The ribs were unremarkable, though unusual for their cross-cut form. Not a particularly noteworthy dish for this 300th meal milestone.
