Royal Paprika Mabo Tofu

Not quite a signature dish, but so long as I’m going to give it a name then I may as well stick to the “higher power” theme of my other nomenclatural efforts (e.g., Spaghetti Dominico, Caesar Ham Mozzy Sandwich).   Forgive me for this self-indulgent explanation of my oh-so-cleverness, but it’s called “royal” because the dish contained three colors of paprika/bell peppers: Red + Orange + Yellow = ROY.  The pieces also look kinda like a crown on top of the rice, even though I didn’t mean it that way.  Next time, I might use red and green and call it “regal.”
