Mushroom Scampi Cannelloni with Mozzarella in Tomato-Parmesan Sauce

These were really good. If only I’d thought to add a binding agent to the filling, making each cannelloni more individually cohesive, maybe just by running the shrimp through the food processor, this could’ve been 4.0.
The sauce – a combination of olive oil butter garlic onions tomatoes tomato paste celery carrots bell pepper parmesan fresh parsley fresh basil dried oregano dried thyme, cooked for 2 hours on low heat until the components have broken down to mush and then blended smooth – has become my go-to these days.
