Spicy Pork Belly Fried Rice

Nowadays, I never throw away leftovers from stir-fries but save them to use as a sauce-base for fried rice. In fact, I find myself reserving a bit in anticipation of making fried rice later on.
As part of the lunch spread earlier in the day, I’d stir-fried some pork bellies in chili paste for the in-laws, who often drop by on Sundays.
